Canthaxanthin, also known as β, β-Carotene-4, 4'-dione, is a very important member in carotenoid family. It is a kind of purplish red crystal or crystalline powder.  Canthaxanthin is insoluble in water, ethanol and other polar solvents, slightly soluble in oil, dichloromethane, etc. which could be found in some mushrooms, crustaceans, fish, algae, eggs, blood, liver, etc.
